I was excited to read your explanation about the title The Way of NOODM, because it describes exactly the way I try to eat! But after checking through some of your recipes, I was puzzled to find cheese and oils as ingredients in some of your recipes (specifically Poblano Stuffed Peppers and Orange-Sasame Vinaigrette). Fontina cheese (from the stuffed peppers recipe) is made from cow's milk and presumably contains casein, which you say you want to avoid. Can you understand my confusion?
